Can you tell me about your flat whites?

Okay, so at my shop we do our flat whites as well as our cappuccinos in a 10oz size only. Both have two shots and only two shots (no large size). This means that really the only difference between our cappuccinos and our flat whites is the way the milk is steamed. One is obviously a lot more of a larger and stronger foam and one is much less. Same ratio of milk to espresso but different milk stretch. Is this how you're doing it at your shop? What sets your flat white apart from your cappuccino and how are you steaming your milk? Are you doing more than one size and what're the differences?

I just really want to be doing a true flat white that is really set apart from the cappuccino.

Extra points if you're from Australia or New Zealand and can tell me how your guys are doing it out there where I hear it's the go to drink.

Advice on Coconut Milk

Hi everyone,

The store I work at just got coconut milk in, and I don't have any experience using it. We're using Pacific's unsweetened original. I noticed there are tiny chunks in it (they almost look like coconut flakes) even after I shake it. Is this normal? It doesn't taste spoiled to me but I'm not a coconut milk drinker. Also, does anyone have tips for steaming it? I have read that it may be better to only use it cold.

Milk

I've noticed that many customers will order a drink without specifying a milk choice. However, if you ask them what kind of milk they want, and extra especially if you lead them by starting to list off soy, almond, skim, etc. they will very likely choose something besides not regular whole milk. I understand some people have lactose intolerances, but I suspect many just opt for whatever sounds healthier (with the exception of a few people ordering "half and half" lattes, which...I don't even want to know)
My question is: does anyone here prefer one kind of milk over the other? Have they ever seen drinks specifically designed for, say, soy milk? or almond milk? Should I feel guilty about how much water almonds use up in drought-ridden California? Or contributing to soy's contributing to the monoculturization of American farming? Or should I just pass those feelings on to the customer?

Experiences with Square? Heard great things, also heard horror stories.

I've been looking into it, and there's a lot it seems to have going for it. But there's also a LOT of complaints online. Some of the complaints seem like shills, but I'm sure some are genuine. It seems like the problems tend to affect companies with larger transactions. But I was wondering if anyone here has had negative experiences with square. I've asked a few shops in person, and all positive reivews thus far.

Double tamp?

So one of my barista's got a lucky chance and was invited to train at Stumptown's New York location. They taught him what i can only call a "double tamp" technique that I had never heard before.

The idea is that you dose a small amount of beans into the portafilter, tamp, then dose the rest of the beans and tamp again. The idea was that you would combine the single and double buttons (if using an electronic dosser). Keep the single at a constant and adjust the time of the double button as needed.

I have just never heard of this technique and wanted to know everyone's opinion on it.
