[Question] Changing seasonal blend as a café's only espresso?

What are you guy's opinions on a café that has only one option for espresso, and it changes twice a year? Do you think it would be better to have a consistently tasting blend that you know would always be there, or do you like the idea of the change? All replies are appreciated! Thanks!
