Milk

I've noticed that many customers will order a drink without specifying a milk choice. However, if you ask them what kind of milk they want, and extra especially if you lead them by starting to list off soy, almond, skim, etc. they will very likely choose something besides not regular whole milk. I understand some people have lactose intolerances, but I suspect many just opt for whatever sounds healthier (with the exception of a few people ordering "half and half" lattes, which...I don't even want to know)
My question is: does anyone here prefer one kind of milk over the other? Have they ever seen drinks specifically designed for, say, soy milk? or almond milk? Should I feel guilty about how much water almonds use up in drought-ridden California? Or contributing to soy's contributing to the monoculturization of American farming? Or should I just pass those feelings on to the customer?
