Should I make two espressos at the same time?

I have an espresso machine. The coffee comes out of the machine from two holes in the porta filter (I believe its called). If I want to make two espressos, is it good practice to use the double espresso "little basket" (don't know what it's actually called) in the scoop and then two espresso cups, one under each whole in the scoop?

I tried this before, but very often the coffee don't come evenly distributed out of the two holes, which is a bit annoying.

What do you do? Do you make one esperesso after another or two at the same time like this?
