I can't make a good cup of coffee and I don't know why

I've recently bought myself a V60, up to this point I have enjoyed my coffee primarily from an Aeropress and before that a French Press. However all the coffees I have brewed from my V60 and my Aeropress lately have been sour and I don't know why. I also don't remember what my coffee tasted like before my recent epiphany. Whether or not it's always been sour or if I have ever managed to make a good brew. Which has now become relatively upsetting.

I was in a cafe the other day enjoying an Ethiopian bean brewed with an Aeropress which tasted like cherries. I have no doubt that I know what I'm tasting for. I've been a barista for several years and regularly have to taste the espressos coming out the machine to ensure the grind is good etc.

So now I can't put my finger on why I can't make a good coffee, I have altered my grind to slow/speed up brewing and have found I can produce sour or bitter coffee, but not the perfect taste. But I know there's more to think than that. I've tried brewing with 92C water and 85C water and tried different beans. I've tried different brewing methods but I just can't see my ever producing a coffee as good as the Ethiopian one I had the other day.

Anyone else find themselves in this dilemma and find an answer? I like to think I know a lot about coffee and yet can't make myself a good cup. Surely it's not this hard to make a cup of coffee. I also can't tell if I'm over thinking all this.
