I just got back from a trip to Germany where I spotted a cheap plastic melitta style pour over for about €1.50. The coffee it produced, especially from the cheap pre ground stuff I was getting out there (no grinder with me), was actually very good, the only problem being quite high variation in strength between brews compared to my usual aeropress/bialetti. I was thinking that maybe I could steep the coffee for a certain time in a pyrex jug or something (essentially like you would in a cafetiere), which in my wishful thinking would combine good extraction with smoothness from the filter.. My question is, since I hate to waste coffee, is there a known reason why people don't do this? It's not a complicated idea so I'm guessing there must be a flaw in brewing this way that I have overlooked.
tl;dr: steeping before filtering, why not?
