For about a year now, I've been religiously making my morning coffee using an Aeropress with the tap water, and my weekend coffee in a french press also using the tap water.
I have recently moved, and couldn't quite put my finger on what was the reason for the change in taste in my coffee. It's just so much more bitter. The beans are the same, the grind is the same, nothing is different although it's a different building with different water. Now, the water here is de-salinated and OK to drink, but the only reason I felt confident being able to use it in coffee is because it was boiled first.
In an effort to try and get my coffee back to the taste I was looking for, I asked my wife to bring some bottled water from the store so we could try that. It has definitely improved, but I'm still not 100% on it. I then look at the water and it's Aquafina. Now, for normal drinking, I HATE Aquafina, I just think it doesn't taste right.
My question is, am I overthinking this? Has something else changed and I haven't realized it? Maybe the kettle got damaged in the move? Or should I try different bottled waters until I find the right one? What about a filter that attached to the faucet?
