Variable Temp Kettle vs Thermometer

I have two kettles—one for work, one for home. As I'm systematically refining my craft of brewing one variable at a time, the final variable is water temperature.

I see two options: either get digital thermometers for each of my kettles, or chunk both and get variable temperature kettles (like the one from Bonavita).

The only advantage I can think of for the variable is the ability to (theoretically) keep a more consistent temperature during the entire brewing process by putting the kettle back on between pours.

How much does that matter, and am I missing anything else? Is there a solid benefit to either thermometers or variable temp kettles I'm missing?
