Low bar preassure.

Hi. Recently, i have change my dosage from 28 to 23 grams ( yes,its overpack and stuff) and i manage to get a pleasant espresso out of it by adjusting the grind size.

Currently, im using kees van der westen tripplette spirit and i notice that whenever i pull a shot, the pressure metre is not at the green area as it tells you that you are extracting with 9 bar preassure.

Furthermore, i find that when i tamp the coffee, it feels like it when in so deep that i can barely reach the coffee but i wanna stick to 23 grams.

I had to use a curve tamper to reach the coffee. Assuming that the coffee is 1 week from roast date and consistent tamp preassure, my question is:

1) how do you get the machine to extract using 9 bars of preassure with a 23 grams dosage?

2) how do i make the grinded coffee pile more so that i can assert my tamping preassure on the puck?

3) does grinding courser or finer piles the coffee more yet it weighs 23 grams?
