It seems most of the advice I read here advises pouring just short of the sides of the V60. However, Matt Perger's method, which is linked here quite often, explicitly recommends finishing each pour with a sweep around the edges to wash the grounds back down. Is there any consensus as to why, if it's bad to do so, Matt Perger advises it?
