Siphoning: Better than modern methods?

Now, I want to preface this with my base knowledge: I don't know much about siphoning, it's pros or cons, and I happen to have the surface level understanding of the process. What I do know is that French press and Pour-over method seems to reign in on how to brew the best coffee. I'm a Barista for a corporate coffee shop with about 2 years experience within the coffee world. So, what can you guys tell me about siphoning? I keep seeing videos and post about it everywhere but apparently it's an old method started around the late 1800's? what's so great about siphoning and should I even consider it above a standard pour-over?
