Ok. Parlor and Blue Bottle Ethiopians. Super light roasts. No matter what grind setting I use on my Encore, the water pools on top of the beans. I started brewing with medium/dark roasts and moved to light roasts, and discovered this problem. Initially, I used the same grind setting (22) on my Encore for a 500g/33g Chemex brew. The result was over extracted and took almost 6 minutes including bloom. So I took what I knew, and increased my grind setting to get a faster brew time. I'm lost.
