Like most folks who enjoy good coffee, I brew a lot at home (I use an Aeropress, you all use whatever method you personally prefer), and the one thing missing from my kitchen is that great hulking noisy £???? slab of precision engineered stainless steel and electronic gizmos that we call an espresso machine, so regardless of how good my home coffee is, I still love to go out and spend ~10 times as much for a cup in a good coffee shop, as they've invested in the equipment and the training/dialling in that I simply can't.
Why is it then that they only offer their fancy coffee beans in a filter (Chemex, Aeropress, whatever setup they prefer), and only offer a house blend for espresso?
