I'm currently lucky enough to be working somewhere that has both a Mythos Clima One and an EK43. We make almost all of our espresso drinks with the Mythos. The EK is used for all manner of filter coffees and occasionally for a single origin espresso.
Yesterday as an experiment I made a few espressos with the Mythos using our blend, and a few with the EK also using the blend. I kept the dose and yield the same and the time was also almost the same (within a second or two). The EK shots, in this small experiment, tasted nicer. Cleaner, brighter, nicer acidity without being sour. The Mythos shots had just a hint more bitterness.
A friend and I are in talks about opening a new shop elsewhere. What would you guys do? Just get an EK for everything and adapt workflow around it? Stick with Mythos plus EK? Something else entirely, like the Mahlkonig Vario Air? Any thoughts appreciated. Especially if anyone has experience using the EK for their main service.
At the place I currently work we use a Linea AV with pid. Leaning towards a Black Eagle for next place.
